I've used an injector on pork butts for a while, and I have wondered about something. Are there certain meats or certain cuts that hold the solution better, or does it depend more on how you inject it?
ReplyDeleteIt's something that takes a little practice to get good at.
ReplyDeleteI watched a video of Chris Lilly injecting pork shoulder and it helped me a lot. One of the secrets for pork is to pull the needle out while simultaneously injecting the solution.
