I ran across a real nice article tonight published by the Southern Foodways Alliance detailing the history of bbq in Tennesee. Whether it's in Memphis or in Rural TN the "Barbecue Oral History Project" funded by the National Pork Board offers a wonderful account of some of the tradition, history and methodology used by pitmasters throughout the Volunteer State.
